Nov 14 Dinner: Lentils, potatoes, green, red and yellow peppers, tomatoes and aubergines casserole

In a pan of boiling water, cook some cleaned red lentils. In another pan of boiling water, cook some peeled potatoes.

In the meantime wash, cleaned and cut the red, the orange, the yellow and the green peppers.
Then washed and cut the aubergines.

Then in a wok, pour some olive oil, then cook the peppers, when ready poor the aubergines, add to the potatoes to this when ready , after having drained them and cut them in pieces, then add some herbs ( fines herbs, cumin seeds, cumin powder), then add the red lentils, and then when almost ready add the tomatoes.

Let cook for a few minutes then serve.

Voila a nice and healthy dish
