As you might remember I really like the sweet potato soup I cooked a few days ago, so today, I did again the butternut squash soup cooked the same way.
So in a quarter of a can of coconut milk, I cooked two small peeled and cut butternut squash. And after 30 minutes of so of cooking, when ready, I blended the mixture to obtain a bowl of a butter nut squash velouté. Yummie!!
