Nov 15 Dinner: sweet potatoes and coconut milk soup

Last night success with the butter nut squash soup with coconut milk, led me to try again this one. So after having peeled and cut one large sweet potato, I cook it in a quarter of coconut milk with some water. I let it cook until all the coconut milk had been absorbed and blend the sweet potatoes cook that way with some hot water to obtain a very nice sweet potatoe soup with race of coconut. I will highly recommend this
